- 1 carrot
- 1 stalk Celery
- 1 onion
- 1 garlic clove
- 100 grams sliced Bacon
- 400 grams mixed Ground meat
- 2 Tbsps olive oil
- 1 Tbsp Tomato paste
- 125 milliliters Red wine
- 250 milliliters Beef broth
- 400 grams crushed Tomatoes (canned)
- salt
- freshly ground peppers
- 400 grams Pappardelle noodles
- 2 Tbsps chopped parsley (for garnish)
Preparation steps

Peel carrot, celery, onion and garlic, rinse, trim and chop finely. Finely dice bacon. Heat oil in a pan, add ground meat and fry for about 5 minutes until browned and crumbly. Add prepared vegetables to the pan, mix, add tomato paste and fry for a few minutes. Deglaze the pan with red wine and broth. Add tomatoes and simmer, stirring occasionally, for about 45 minutes. As required add a little broth. Then season with salt and pepper.

Cook pasta in a pot with plenty of salted water until al dente, drain well and add to the pan. Mix with the sauce and serve garnished with parsley.
