Preparation steps

Cook pasta in salted boiling water until al dente. Meanwhile, wipe mushrooms clean with a paper towel and cut into slices. Rinse and halve peppers, remove seeds and ribs, and cut into strips. Rinse, core and slice tomatoes. Peel and finely chop garlic. Heat 4 tablespoons oil in a pan and sauté garlic until golden.

Add mushrooms and peppers and sauté 3-4 minutes over medium heat. Stir in tomatoes and cook briefly. Season with salt and pepper. Drain pasta and add to pan. Stir in parsley and butter and toss to combine. Serve immediately. Top with grated pecorino cheese, if desired.
