500 grams green Asparagus
1 shallot
1 garlic clove
20 King prawn (deveined and peeled down to tail segment)
salt
Red pepper flakes
2 Tbsps olive oil
100 milliliters dry white wine
freshly ground peppers
400 grams Orecchiette pasta
100 milliliters Whipped cream
2 Tbsps grated Parmesan
1 splash lemon juice
Basil (for garnish)

Preparation steps

1.

Peel the bottom third of asparagus and cut into 3-4 cm (approximately 1 1/2 inch) long pieces. Peel shallot and garlic and finely chop. Rinse prawns, pat dry and season with salt and red pepper flakes. Heat oil in a pan, fry prawns on all sides until golden brown, remove from the pan and set aside. Add asparagus, shallot and garlic to the pan and fry for 1-2 minutes. Deglaze the pan with wine and season with salt and pepper. Cook covered for 5-6 minutes.

Cook pasta in a pot of boiling salted water until al dente.

Add cream to the pan, mix well, add Parmesan and season with lemon juice, salt and pepper. Add prawns back into the pan and simmer uncovered for 2-3 minutes. Add drained pasta to the pan and mix.

Arrange pasta with prawns and asparagus on plates and serve garnished with basil.
