- 500 grams Spiral pasta (i.e Gemelli or fusilli)
- 1 fresh garlic clove
- 1-2 fresh red chili peppers
- 6 Tbsps olive oil
- Sea salt
- black freshly ground pepper
- 1 Tbsp butter
- To garnish
- freshly chopped Fresh herbs (to taste)
Preparation steps
1.
Remove the garlic cloves. Peel 4 cloves and cut into thin slices. Rinse the chilies and dry. remove the stalk and cut in half lengthwise, remove the seeds. Cut into thin rings. Prepare the pasta according to the package directions in plenty of salted water.

Heat the olive oil in a nonstick pan and cook the unpeeled and chopped garlic. Add the chile rings.

Drain the pasta through a sieve and save the pasta water. Add the pasta to the pan with the garlic. Add a small ladle of pasta water to the pan and mix everything together. Add butter to taste and season with salt and pepper. Before serving, sprinkle with fresh herbs to taste.
