4 Tilapia (each about 150 grams)
3 Tbsps lemon juice
1 garlic clove
3 stalks Basil
300 grams Tagliatelle
salt
3 Tbsps olive oil
½ Tbsp Pastry flour

1 Tbsp butter
100 milliliters Vegetable broth
50 grams Trout roe

Preparation steps

Rinse tilapia fillets, pat dry and cut into bite-sized pieces. Drizzle fish with 1 tablespoon of lemon juice. Peel and chop garlic. Rinse basil, shake dry, pluck off leaves and cut into thin strips.

Cook pasta acoording to package instructions until al dente. Heat 2 tablespoons of olive oil in a pan. Coat fish fillets with flour and cook in a pan for about 3 minutes per side or until golden brown on both sides. Season with salt and pepper, remove from pan and keep warm. Add 1 tablespoon of olive oil and butter to the same pan and saute garlic for a few seconds, deglaze pan with 2 tablespoons of lemon juice, vegetable broth and bring to a boil. Season with salt and pepper and add basil. Return fish to the pan and heat through.

Drain pasta and arrange on plates, top with fish and drizzle with sauce. Garnish with trout caviar and serve immediately.
