500 grams turkey breasts
1 Tbsp clarified butter
1 shallot (finely chopped)
1 Tbsp butter
1 Tbsp ground almonds
2 egg yolks
salt

2 Tbsps Sesame seeds (roasted)
1 Tbsp parsley (finely chopped)
For the vegetables
400 grams green Beans
2 Tbsps butter
250 grams Cherry tomatoes
salt
freshly ground peppers
1 Tbsp chopped parsley

Preparation steps

For the vegetables, rinse the green beans, blanch in boiling salted water for 8 - 10 minutes, then drain, rinse immediately with cold water and drain.

Sweat the shallot sweat in butter until translucent. Mince the turkey meat in a meat grinder, then mix with shallots, almonds, egg yolks, parsley and sesame seeds, season with salt and pepper and form into small meatballs. Slowly fry in hot clarified butter on both sides until golden brown.

Meanwhile, cook the pasta in boiling salted water according to the package information, until al dente.

Rinse the cherry tomatoes just before serving and cut in half. Fry the beans in hot butter, let heat and season with salt and pepper.

Drain the pasta and serve with the meatballs, beans and cherry tomatoes on plate. Season with some freshly chopped parsley and serve.
