100 milliliters Apple juice
150 grams sugar
1 organic lemon (juiced and zested)
4 sprigs mint

Preparation steps

Blanch the peaches in hot water, then remove. Peel, halve, remove the stones, and coarsely chop. Bring the juice to a boil with the sugar and 100 ml (approximately 3 ounces) of water. Add the peaches, lemon juice, and lemon zest, and simmer for 10 minutes.

Remove the lemon zest. Rinse and dry the mint. Remove the leaves and finely chop. Stir into the compote, mix well, then transfer into the prepared jars. Seal tightly and cool completely.
