350 grams Pastry flour
500 milliliters milk
100 grams Shelled peanut
2 eggs
5 Tbsps sugar
3 Tbsps Sesame seeds
2 Tbsps vegetable oil
3 tsps Baking powder
½ tsp Ground cinnamon
salt

Preparation steps

Coarsely chop the peanuts and toast with the sesame seeds in a dry pan. Sprinkle the nuts with 4 tablespoons of sugar and continue cooking until the sugar has melted. Remove from heat. Combine the flour, baking powder, cinnamon and salt in a large bowl. Add the eggs, vegetable oil and milk and whisk until smooth.

Heat a bit of oil in a non-stick pan and ladle in some of the crepe batter. Cook for about 1 minute over medium heat, sprinkle about 2 tablespoons of the peanut and sesame seed mixture over the top, flip and cook for about 2 minutes on the other side. Remove from the pan, keep warm in a 70°C (approximately 150°F) oven and repeat with the remaining batter. Fold the crepes into quarters, dust with powdered sugar and serve.
