1 large, red onion
2 Tbsps Caper
1 bunch parsley
4 Tbsps Orange juice
3 Tbsps White vinegar
6 Tbsps olive oil

Preparation steps

1.

For the salad: Place the pearl barley in a fine sieve and rinse with cold water. Place in a pot along with 750 ml (approximately 3 1/4 cups) of water. Bring to a boil, reduce the heat to low, and cook, covered, for 25 minutes. Drain and allow to cool.

Peel and dice the onion.

Rinse the parsley, shake dry, pluck leaves and finely chop.

For the dressing: In a bowl, whisk the orange juice ith the vinegar and oil. Season with salt and pepper to taste.

5.

For serving: In a bowl, stir the pearl barley with the onions, capers, parsley and dressing until thoroughly combined. Serve in bowls.
