1 handful parsley
1 onion
1 garlic clove
2 Tbsps butter
1 Tbsp Pastry flour
100 milliliters dry white wine
200 milliliters Vegetable broth
400 grams Penne
salt
400 grams smoked Salmon (piece)
100 milliliters Whipped cream
white peppers (freshly ground)

Preparation steps

1.

Rinse the parsley and set a little aside for garnish. Finely chop the rest. Peel onion and garlic and finely chop. Sauté together in hot butter until translucent and sprinkle with the flour. Pour in wine and add the broth. Simmer a few minutes.

Cook the penne in boiling salted water until al dente. Cut the salmon into cubes.

3.

Puree the sauce with an immersion blender or pass through a sieve. Stir in cream and simmer or add broth until sauce has desired consistency. Season with salt and pepper.

4.

Arrange the penne on plates with the sauce and the salmon and serve garnished with parsley.
