500 grams Mutton (or lamb meat, from the leg)
2 onions
2 garlic cloves
1 lg can Tomatoes (800 g)
3 Tbsps sunflower oil
1 dried chili pepper
600 milliliters Chicken broth
300 grams short grain rice (such as arborio rice)
salt
black peppers
1 tsp dried oregano
fresh oregano (for garnish)

Preparation steps

Cut lamb cut into small cubes, each about 2 cm (approximately 3/4 inch). Peel and chop onions and garlic. Heat the oil in a pan and fry mutton fry in portions over high heat for about 4 minutes, stirring frequently. Set aside cooked mutton pieces. Add onions and garlic to hot pan and fry until translucent. Return mutton to pan with the onions. Deglaze pan with chicken broth reduce heat and let simmer for about 15 minutes.

Crush dried chile peppers in a mortar. Add crushed chile peppers, tomatoes, tomato juice and rice to pan with mutton and season with dried oregano, salt and pepper. Dice tomatoes if needed. Cover and cook for about 25 minutes over low heat. Stir occasionally and add more water if  rice is too dry. Cook until rice is tender. To serve, sprinkle with oregano.
