2 medium Red pepper
2 medium green peppers
2 onions
2 Tbsps olive oil
6 ozs Paella rice
12 ozs Vegetable broth
½ tsp Saffron (1 jar), more if desired
4 ozs frozen Peas
4 ozs chunky Tomatoes
1 pinch salt
1 pinch peppers
½ tsp sweet paprika
8 ozs Pineapple (chunks)
1 large Banana
4 stalks Chives

Preparation steps

Quarter the peppers and cut into pieces. Peel and dice the onions.

Heat 2 tablespoons of oil in a coated pan. Briefly sauté the onions, rice and paprika in it. Bring the broth with the saffron threads to the boil. Add the stock to the rice and cook covered according to the instructions. Mix in the peas and tomatoes for the last 5 minutes. Season to taste with salt, pepper and paprika powder.

Cut the pineapple into pieces. Peel and slice the banana. Heat the remaining oil in a non-stick pan. Fry the banana briefly and mix loosely with the rice. Put the pineapple in the pan, fry it briefly and arrange on top of the rice. Serve sprinkled with chives.
