1 Tbsp Lime juice

Preparation steps

Peel the pineapple, quarter lengthwise, and remove the core. Cut the fruit into cubes. Rinse the mint, dry, remove the leaves, and slice into strips. Peel the hard exterior of the lemongrass, cut off the ends, and finely chop. Slit the vanilla pod lengthwise and scrape out the seeds. Mix the lemongrass with the vanilla seeds, coconut syrup, and  lime juice. Mix into the pineapple and marinate for 5-10 minutes. Arrange on plates, top with the mint, and garnish with a slice of lime and lemongrass.
