2 large onions (halved and sliced)
1 cup grated Parmesan
1 Tbsp dried herbes de Provence
2 sprigs thyme (leaves picked)
2 small Baguette
0.333 cup Anchovy
12 pitted, black Olives

Preparation steps

1.
Heat 2 tbsp oil in a pan and fry the onions over a low heat for around 10 minutes, then cool slightly.

Heat the grill function in the oven.
3.
Mix together the onions, parmesan and herbs. Thinly slice off the top of each baguette and scoop out some of the bread. Spread the onion mixture inside the baguette. Arrange the anchovies and olives in a criss-cross pattern on top.
4.
Grill for 5-10 minutes then serve cut into slices and drizzled with the remaining olive oil.
