350 grams Pastry flour
150 grams Spelt flour
1 cube fresh Yeast (42grams or 1 1/2 ounces)
1 tsp sugar
2 tsps salt
1 pinch ground Cardamom
70 grams Pistachio (coarsely chopped)
30 grams Pumpkin seed (coarsely chopped)
2 Tbsps Walnut oil
Pastry flour (for work surface)
vegetable oil (for baking dish)

Preparation steps

Mix yeast with 250 ml (approximately 1 cup) of lukewarm water and sugar until smooth. Mix flour with salt, cardamom and oil in a bowl, pour in dissolved yeast and knead into a smooth dough with the dough hook of an electric hand mixer. If necessary, add a little flour or water to get the right consistency. Add nuts. Cover and let rest in a warm place for about 45 minutes.

Grease baking dish with oil. Place dough on a floured surface and knead. Shape into a long loaf and place in baking dish. Cover and let rest for another 30 minutes. Preheat oven to 200°C (approximately 400°F). Place a bowl of hot water in bottom of oven. Brush dough with a little water and bake on middle rack for 50-60 minutes. Remove from oven, take out of baking dish and brush with water. Slice and serve.
