600 grams Pastry flour
1 Tbsp salt
1 cube fresh Yeast (42 g)
50 milliliters olive oil
For the tomato sauce
2 garlic cloves
2 Tbsps olive oil
600 grams peeled Tomatoes (can)
salt

1 tsp dried oregano
For the toppings
3 scoops Mozzarella (about 125 g)
300 grams fresh button Mushroom
250 grams fresh Spinach
Nutmeg
1 yellow onion
½ bunch Chives (about 15 g)
1 can Tuna (in its own juice)
1 Tbsp Caper

Preparation steps

For the dough: Mix the flour with the salt, sift into a bowl and make a well in the middle. Mix the yeast in 300 ml (approximately 1 1/4 cup) of lukewarm water and pour with the oil into the well. Work everything to a smooth dough, knead for at least 10 minutes on a floured surface and let rise for 1 hour in a warm place until the dough has doubled in size and blisters.

For the tomato sauce: Meanwhile, peel the garlic and chop finely. In a saucepan, heat the oil and sauté the garlic until translucent. Add the tomatoes and season with salt, pepper and oregano. Simmer for 15-20 minutes over medium heat. Crush the tomato with a whisk. Preheat the oven to 220°C (approximately 430°F).

For the toppings: Drain the mozzarella and cut into thin slices. Rinse the mushrooms, pat dry, remove any excess dirt and cut into slices. Sort the spinach, rinse, and, while still dripping wet, cook in boiling salted water until it wilts. Remove from pot using a slotted spoon, thoroughly rinse with cold water, press out any excess water and chop. Season with salt, pepper and nutmeg. Peel the onion and cut into small cubes. Rinse the chives, shake dry and cut into small rings. Drain the tuna, pick apart with a fork and mix with the drained capers, onion cubes and chives.

Knead the dough well once more on a floured surface and divide into 4 equal portions. Thinly roll out each portion of dough until 3 mm (approximately 1/8 inch) thick and place each pizza dough on a greased pizza tray. Spread the tomato sauce on each pizza dough and place the mozzarella slices over the sauce. Top each pizza with four equal sections of the toppings: tuna, spinach, salami and mushrooms, respectively. Bake in preheated oven for 20-25 minutes. Remove and serve immediately.
