20 grams Yeast
250 grams Pastry flour
½ tsp salt
1 Tbsp olive oil

4 Anchovy fillet

Preparation steps

For the dough, dissolve the yeast with 2 tablespoons of warm water. Mix the flour with the salt in a bowl. Make a well in the center and pour in the yeast. Cover the yeast with a little bit of flour and let rise for 15 minutes. Gradually add 100 ml (approximately 1/2 cup) of lukewarm water and knead into a smooth dough. Cover with a cloth and let rise for about 1 hour in a warm place.

For the topping, peel the onion, garlic, and chop finely. Rinse and cut the leeks into small rings. Rinse the tomatoes and cut into slices. Chop the walnuts coarsely and toast in a dry pan.

Sauté the garlic and leeks in a small pan with butter for 1-2 minutes.

Preheat the oven to 220°C (approximately 425°F).

After resting, knead the dough on a lightly floured surface. Divide into 4 pieces and roll out the pizzas on a parchment-lined sheet tray. Brush with olive oil and top with the tomato slices, leeks, onions, walnuts, olive, anchovies, and crumbled feta. Season with salt and pepper. Sprinkle with herbs and drizzle with olive oil.

Bake in preheated oven for 15-20 minutes. Serve immediately, cut into slices.
