Preparation steps

1.

For the dough: Crumble the yeast into a bowl and stir until smooth with about 200 ml (approximately 3/4 cup) of lukewarm water and the sugar. Add the flour, olive oil and salt and knead into a smooth dough. Cover and let rise in a warm place about 1 hour.

Divide the dough into 4 balls and using a little flour, flatten into round discs. Roll out into crusts about 22 cm (approximately 9 inches) in diameter, making the edges slightly thicker, and place on 2 greased baking sheets.

Blanch tomatoes, peel, and cut into small pieces, season with salt and pepper and spread on pizza crust, leaving a small border uncovered. Cut mozzarella into thin slices and place on the tomatoes and drizzle with a little olive oil.

Bake pizzas in a preheated oven at (220°C) (approximately 425°F) for 10 minutes. Then cover with chopped basil and again sprinkle with a little olive oil bake another 10 minutes.
