Pizza with Pears and Gruyère Cheese
Ingredients
- For the dough
- 250 grams Pastry flour
- 20 grams fresh Yeast (1/2 cube)
- 100 milliliters lukewarm water
- 3 Tbsps olive oil
- salt
- For the toppings
- 2 small Pear
- juice of lemons
- freshly ground pepper
- 1 scoop Mozzarella
- 100 grams Gruyere (freshly grated)
- Radicchio
Preparation steps
Pour the flour, oil and salt into a bowl. Stir the yeast with warm water to dissolve, then add to the flour and process everything with the dough hook of an electric hand mixer to make a smooth dough. Cover and let sit in a warm place for about 45 minutes.
Rinse the pears, cut into quarters lengthwise, remove the cores and cut into slices, then immediately sprinkle with lemon juice.
Cut the mozzarella into slices.
Knead the dough on lightly floured surface, roll out two round pieces with slightly thicker edges and place on a greased baking sheet.
Distribute the pears on the dough, sprinkle with mozzarella and grated Gruyère.
Bake the pizzas in a preheated oven at 220°C (approximately 425°F) for about 20 minutes.
To serve, grind fresh pepper on top, sprinkle with radicchio leaves, and cut into slices.
