7 ozs sugar
1 organic lemon (zested)
4 eggs
12 ozs Pastry flour
2 tsps Baking powder
6 ozs cornstarch
9 ozs Yogurt

Preparation steps

1.

Preheat the oven to 350°F. Coat bundt pan with butter and sprinkle with flour.

Rinse plums, halve and pit. For the batter, mix the butter with the sugar and lemon zest until fluffy, then gradually add the eggs and beat until creamy. Mix the flour with the baking powder and the cornstarch and gradually stir into egg mixture, alternating with the yogurt.

Place half of the batter into the pan and spread evenly. Arrange the plums on the batter and cover with the remaining batter. Spread smooth and bake in oven until a toothpick inserted in the center comes out clean, about 1 hour. If the cake is getting too dark, cover with aluminum foil.

4.

Remove from oven and allow to cool in the pan. Carefully invert onto a cake stand and serve.
