- 1 lemon (zested and juiced)
- 350 milliliters white Grape juice
- 2 tsps cornstarch
- ½ tsp Ground cinnamon
- 50 grams sugar
- 700 grams Plum
- 500 grams Mascarpone
- 3 Tbsps honey
- 1 packet Vanilla sugar
- 200 grams Whipped cream
- 250 grams Sponge cake base (or pound cake)
- 4 Tbsps Rum
- Chocolate curl (for garnish)
Preparation steps
1.
Measure 4 tablespoons grape juice and mix with the cornstarch. Mix the remaining grape juice and half or the lemon zest and juice, cinnamon and sugar and bring to a boil.

Rines the plums, halve, pit and dice. Simmer about 5 minutes in the sauce over medium heat. Stir in the plums. Let the plum compote cool.

Beat the mascarpone, honey, remaining lemon zest and juice. Beat the cream with vanilla sugar until stiff and fold into the mascarpone mixture. Cover and chill.

Cut the sponge cake into pieces and place in 10 tall, wide glasses. Drizzle with rum. Top with the plum compote and then the mascarpone cream. Refrigerate 30 minutes. To serve, garnish with mint and chocolate shavings.
