4 Cod (each about 160 g)
100 milliliters white wine
2 rosemary
1 kilogram potatoes (small)
100 grams Pine nuts
1 Tbsp thyme (finely chopped)
2 Tbsps parsley (finely chopped)
1 garlic clove
lemon juice (splash)
olive oil

Preparation steps

Scrub the potatoes and cut in half. Sprinkle an oiled baking tray with salt and rosemary, then arrange potatoes on top. Drizzle with olive oil and toss to coat. Bake in preheated 180°C (approximately 350°F) oven for about 30 minutes, until golden brown.

Poach cod fillets in white wine and about 400 ml (approximately 1-1/2 cups) of water and a sprig of rosemary for about 10 minutes.

For the pine nut herb sauce, toast the pine nuts in dry skillet. Remove and let cool, then finely chop. Finely chop the garlic, then combine with the pine nuts, about 100 ml (approximately 1/4 cup) of olive oil, thyme and parsley. Season with lemon juice and sea salt.

Arrange the cod and potatoes on warmed plates. Pour serve on top evenly. Serve immediately.
