4 ozs Raw cane sugar
14 ozs Spelt flour (+ 1 tablespoon for processing)
7 Tbsps Almond flour

10 ozs lukewarm milk
6 ozs Blue- Poppy seeds
3 Cardamom
1 egg yolk

Preparation steps

Crumble the yeast in a small bowl, sprinkle 1 tablespoon raw cane sugar over it and leave to rise for 15 minutes until the yeast is liquid.

Place yeast, flour, 5 tablespoons sugar, 1 pinch of salt, egg, 7 tablespoons butter, and 6.75-ounce lukewarm milk in a bowl and work into a smooth dough. Let the dough rise in a warm place for 45 minutes.

In the meantime, rinse the poppy seeds with lukewarm water, drain and grind them in a small food processor. Bring the remaining milk, cardamom, remaining butter, and remaining sugar to the boil in a small pot. Stir in the poppy seeds, cover the pot and let it swell for 45 minutes off the heat. Remove cardamom capsules.

Roll out the dough into a rectangle on a floured work surface and spread with the poppy seed filling. Roll up from the long side and cut into 1-inch wide pieces. Place the poppy seed pinwheels on a baking tray covered with baking paper. Whisk the egg yolk with 1 tbsp. water and brush the pinwheels with it. Bake in a preheated oven at 400 °F for 18-20 minutes. Remove from oven and let cool on a cake rack.
