2 ⅔ cups Sausage (sliced)
1 onion (diced)
2 cups Mushrooms (sliced)
1 cup cherry Tomatoes (halved)
1 handful fresh parsley (chopped)
ground Caraway

Preparation steps

1.
Fry the potatoes in the clarified butter for around 5 minutes turning frequently. Add the sausages and fry for another 5 minutes.
2.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
3.
Add the onion and the mushrooms to the pan and fry for another 5 minutes until golden brown. Add the tomatoes and the parsley and season with salt, ground black pepper and caraway.
4.
Crack the eggs into the pan and bake in the oven for around 5 minutes. Serve immediately.
