- 800 grams Pork ((such as neck)
- 4 onions
- 2 garlic cloves
- 4 Tomatoes
- 2 Tbsps sunflower oil
- 200 milliliters Red wine
- 300 milliliters Beef broth
- 1 tsp Juniper berries
- 5 fresh bay leaves
- 2 Cinnamon stick
Preparation steps

Rinse the pork, pat dry, parry and cut into large cubes. Peel the onions and garlic, cut the onions in columns and the garlic into slices. Blanch the tomatoes in boiling water, drain, peel, quarter, cut out the core and dice finely.

Sear the pork in a pan with hot oil. Add in the onions and garlic and saute for 1-2 minutes. Add in the red wine, simmer for a while, and pour in as much broth that the pork is just covered.

Mix in the tomatoes, juniper berries, bay leaf and cinnamon stick, and cook the stew covered over low heat for about 1.5 hours, stirring occasionally.

Pour a little broth into the stew, if required. Remove the lid during the last half hour and let the stew simmer. Season with salt and pepper and serve.
