- 1 kilogram Roasted suckling pig (with rind)
- 2 garlic cloves
- 2 Tbsps Canola oil
- 2 Tbsps grainy Mustard
- salt
- peppers
- 2 Tbsps clarified butter
- 2 Apple
- 400 grams broad Beans
- 2 shallots
Preparation steps
Preheat the oven to 180°C (approximately 350°F).
Rinse roasted suckling pig, pat dry and flatten. Crush garlic and mix in a bowl with oil and mustard and season with salt and pepper. Spread garlic mixture onto roasted suckling pig, roll up firmly, tie with kitchen twine and season with salt and pepper.
Heat clarified butter in a roasting pan and sear pig on all sides. Then bake in the preheated oven for 30 minutes. From time to time pour water over pork during the cooking time.
Meanwhile, rinse apples and cut crosswise into 1 cm (approximatley 1/2 inch) thick slices. Rinse beans, trim as needed and cut into bite-size pieces. Peel shallots and cut lengthwise into strips. Mix everything in a bowl and season with salt and pepper.
Remove roast from the oven, spread apples, beans and shallots around roast suckling pig around and put it back in the oven to cook again for another 30 minutes. Serve immediately.
