4 cups new potatoes (cooked and cut into thick slices)
4 ½ cups green Asparagus (lower third peeled and halved)
3 Tbsps olive oil
1 handful Basil (roughly chopped)
½ unwaxed lemon (juiced, zest grated)
0.333 cup Parmesan (grated)

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
2.
Place the potatoes and the asparagus on a baking tray and drizzle with oil. Season with salt and ground black pepper and bake for around 20 min.
3.
Remove the vegetables from the oven and stir in the basil, lemon zest and juice. Season to taste and serve sprinkled with Parmesan.
