100 grams Wild garlic
3 egg yolks
4 Tbsps vegetable oil
salt
freshly ground pepper

4 medium sized potatoes (floury)
vegetable oil (for frying)

Preparation steps

1.

Rinse, dry and finely crush garlic.

2.

Beat egg yolks until frothy, then add in 4 tablespoons of oil (everything should be room temperature) and stir in the crushed garlic. Season with salt, pepper and sugar.

3.

Rinse and cut the potatoes into strips. Place in boiling salted water and pat dry. Fry in hot oil (160°C, approximatley 320°F) until golden. Drain on paper towels and sprinkle with salt. Serve with the garlic dip.
