1 kilogram starchy potatoes
salt
2 slices Toast
1 Tbsp clarified butter
1 egg
Nutmeg
100 grams Pastry flour
Nutmeg
freshly chopped parsley (for garnish)

Preparation steps

1.

Peel the potatoes and boil in salt water for about 30 minutes.

Remove the crust from the bread and cut into small cubes. Melt the butter in a frying pan and fry the bread cubes for 2-3 minutes, until golden brown and crispy. Drain on paper towels.

Drain the potatoes and let evaporate. Press the potatoes through a ricer. Stir in the egg. Season with salt and nutmeg. Add the flour and knead well. Shape small portions of the dough into patties. Place a couple of croutons on each and surround with the dough.

Place the dumplings in boiling salt water. Cook over low heat for about 20 minutes.

5.

Remove the dumplings from the water and serve garnished with parsley.
