800 grams waxy potatoes
salt
500 grams fresh Porcini mushroom
1 bunch scallions
7 Tbsps vegetable oil
4 slices Bacon
4 egg yolks
100 milliliters dry white wine
1 Tbsp Mustard
80 grams Yogurt (0.1% fat)
freshly ground peppers
1 tsp sugar
2 tsps finely chopped rosemary

Preparation steps

1.

Rinse the poatoes and cook for 30 minutes in boiling salted water. Peel while hot, and let cool.

Clean the mushrooms and cut into slices.

3.

Rinse the scallions, and thinly slice.

4.

Heat 2 tablespoons of oil in a large skillet. Cut the bacon crosswise, and cook until crispy. Remove from the pan and drain on paper towels.

Slice the potatoes.

Add 3 tablespoons of oil to the rendered bacon fat, and cook the potatoes until golden brown. Remove and drain on paper towels.

Add another 2 tablespoons of oil to the pan and cook the mushrooms and scallions for 5 minutes.

Whisk the egg yolks, wine, mustard, yogurt, salt, and pepper, in a pot over low heat. Stir constantly until the sauce is creamy and has thickened. Make sure the sauce doesn't boil. Mix the potatoes, bacon, and mushrooms. Season with salt, pepper, and rosemary. Serve garnished with the sauce.
