500 grams small, new potatoes (scrubbed and rinsed)
1 Tbsp butter
1 Red onion (thinly sliced)
150 grams Snow peas (cleaned, ends trimmed)
175 grams trout (smoked, coarsely cut)
150 grams baby Spinach (thoroughly rinsed and spun dry)
150 grams Yogurt (0.1% fat)
30 grams Horseradish cream (from a jar)
salt
freshly ground peppers
2 Tbsps Orange juice

Preparation steps

1.

Cook potatoes in salted water for about 20 minutes. Drain and let liquid evaporate. Allow to cool.

Sauté onion rings in butter until soft and let cool.

3.

Mix potatoes with onion, snow peas, spinach and trout and place in a salad bowl.

4.

Whisk yogurt with horseradish cream and orange juice and drizzle over the salad.
