500 grams small, new potatoes (scrubbed)
1 Tbsp butter
1 onion
2 sm cans Tuna (wild-caught, coarsely cut)
150 grams baby Spinach (thoroughly rinsed and spun dry)
1 Tbsp bold Dijon mustard
salt
freshly ground peppers
2 Tbsps Orange juice
3 Tbsps olive oil
1 bunch Chives (cut into rolls)

Preparation steps

1.

Cook potatoes in boiling salted water for about 20 minutes. Rinse, drain and peel.

2.

Sauté onion in butter until translucent, then remove from heat and let cool.

3.

Mix potatoes with onion, spinach and tuna. Toss and place in a salad bowl.

4.

Season orange juice with salt, pepper and mustard. Whisk in the oil and chives (setting aside some chives for garnish), season to taste and mix dressing with the salad ingredients. Serve sprinkled with chives.
