Preparation steps

1.

Cut the potatoes into thin slices. Rinse the spinach and shake dry.

2.

Heat the oil in a pan and fry the potatoes. Break the eggs into a cup, whisk them and season with salt and pepper. Pour over the potatoes and shower with spinach. Cook over low-medium heat.

3.

Leave to rest for about 10 minutes.
