4 potatoes (each about 180-200 grams)
salt
1 shallot
1 garlic clove
1 red chili pepper
1 red Bell pepper
2 Tbsps olive oil
400 grams Ground meat
½ tsp freshly chopped thyme
½ tsp freshly chopped rosemary
250 grams sliced Tomatoes (canned)
peppers (from the mill)
150 grams freshly grated Cheese (i.e gouda)

Preparation steps

Rinse potatoes and cook for 20-25 minutes in boiling salted water. Preheat the oven to 200°C (approximately 400°F). Peel the shallots and garlic and mince. Rinse the chilies and cut in half lengthwise. Remove the seeds and finely chop the flesh. Rinse the peppers, cut in half, remove the seeds and dice.

In a pan, heat the oil and sauté the shallots with the garlic and the chilies. Brown the ground meat until crumbly. Add the peppers and herbs and then pour in the tomatoes. Season with salt and pepper and simmer for about 15 minutes over medium heat.

Drain the potatoes, halve and scoop out the center leaving a 1 cm (approximately 1/2 inch) wide margin. Place meat sauce in the potato and sprinkle with cheese. Let cook in a preheated oven for about 15-20 minutes. 

To serve: Remove from oven and serve warm.
