120 grams Smoked bacon
600 grams waxy potatoes (cooked the day before)
2 Tbsps clarified butter
salt

1 pinch ground Caraway

Preparation steps

Rinse parsley, shake dry and finely chop the leaves. Rinse tomatoes, cut into quarters, remove stalks and seeds and chop finely. Cut bacon into small cubes. Peel potatoes and cut into 1 cm (approximately 1/2 inch) cubes.

Heat butter in a pan and fry potatoes with bacon for 4-5 minutes. Turn as needed until crispy. Add tomatoes and cook for 1-2 minutes. Add cumin and season with salt and pepper. Add egg, stir and cook until done. Season again with salt and pepper. Sprinkle with parsley and serve.
