Ingredients
- For the topping
- 500 grams Pumpkin (such as Muscat)
- 1 stalk Leeks
- 150 grams Boiled ham (thinly sliced)
- 150 grams Crème fraiche
- 200 milliliters Whipped cream
- 4 eggs
- 100 grams grated Emmentaler cheese
- 2 Tbsps freshly chopped parsley
- salt
- freshly ground peppers
- Nutmeg
Preparation steps
For the pastry: mix flour with almonds, Parmesan, egg and butter cut into pieces and knead to a smooth dough. If necessary, add a little cold water. Wrap in plastic wrap and refrigerate for 30 minutes.
Butter quiche pan.
For the topping: grate pumpkin pulp finely. Quarter leek lengthwise, rinse and cut into 3-4 cm (approximately 1 1/2 inch) long pieces. Cut ham into thin strips. Whisk crème fraîche with cream, eggs and Emmentaler, combine with pumpkin, leek and ham. Season with salt, pepper and nutmeg, add parsley and mix well.
Roll out pastry on a floured surface and line quiche pan with it, making an edge all around. Spread with cream mixture and bake in preheated oven at 180°C (approximately 350°F) for about 50 minutes or until golden brown.
Remove from oven and serve warm or cooled.
