- 3 parsley
- 2 Kiwi
- 2 Tbsps hazelnut kernels
- 10 ozs Compté- Cheese
- 1 Star anise
- 4 Tbsps olive oil
- 1 tsp honey
- 4 Tbsps White vinegar
- salt
- peppers
Preparation steps
Wash chicory and parsley, clean chicory and cut into strips. Shake parsley dry and chop. Peel kiwis, quarter lengthwise, then cut into slices. Coarsely chop hazelnuts and finely dice Comté.
For the dressing, crush star anise and whisk with oil, honey and vinegar. Season to taste with salt and pepper.
Loosely mix chicory, parsley, kiwis and Comté with some dressing and arrange on plates. Drizzle remaining dressing over the top and add hazelnuts. Serve quick winter salad.
