- 250 grams Oyster mushrooms
- 250 grams shiitake mushrooms
- 250 grams button Mushroom
- 1 onion
- 1 garlic clove
- 1 bunch scallions
- 1 bunch parsley
- 300 grams Butter cheese
- 100 grams Bacon
- 1 Tbsp olive oil
- salt
- white peppers (freshly ground)
- 1 Tbsp Sherry vinegar

1.
Clean all mushrooms carefully, cut off stems and chop all mushrooms into small pieces.

Peel and finely chop onion and garlic. Rinse and dry scallions, cut diagonally into thin rings.
3.
Rinse parsley, shake dry and pluck off leaves, chop finely. Cut off cheese crust and slice cheese, arrange on a platter.

Dice bacon. Heat oil in a pan and cook bacon until crispy. Add mushrooms, including stems, and saute for about 2 minutes. Add onion and garlic and season with salt, pepper and sherry vinegar.
5.
Spread mushroom mixture in raclette pans. Sprinkle with scallions and parsley.
6.
Cover with cheese and bake under a hot broiler until cheese is melted and golden brown, watching carefully. Remove from the oven and serve.
