- 2 handfuls fresh Radish leaf (from 1-2 bunches organic radishes)
- 1 garlic clove
- 2 Tbsps Pine nuts
- 1 oz Parmesan (1 piece)
- 7 Tbsps olive oil
- salt
- peppers
- 1 tsp lemon juice
Preparation steps
1.
Wash radish leaves and shake dry. Peel and chop the garlic.
2.
Roast pine nuts in a hot pan without fat for 3 minutes at medium heat. Finely grate the parmesan.
3.
Finely puree the radish leaves, garlic, pine nuts and the oil with a hand blender. Mix in the parmesan. Season to taste with salt, pepper and lemon juice.
