150 grams room temperature butter
150 grams sugar
3 eggs
5 drops Bitter almond oil
80 grams ground almonds (blanched)
100 grams Pastry flour
50 grams raisins
2 tsps Baking powder
50 grams blanched almonds

Preparation steps

1.

Preheat oven to 175°C (approximately 350°F). Coat loaf pan with butter and sprinkle with breadcrumbs.

Beat butter and sugar until creamy. One at a time, beat in eggs. Stir in almond oil. In batches, stir ground almonds, flour, raisins and baking powder into batter. Do not overmix. Pour batter into pan, sprinkle with almonds and bake about 1 hour. Test for doneness with a toothpick.

3.

Let cool in the pan, then invert. Cut into slices and serve.
