Preparation steps

Wipe the raspberries, then transfer to a large container. Pour the vinegar over the raspberries. Cover tightly and let infuse for 4 weeks in a warm place.

Line a colander with cheesecloth and set over a bowl. Strain the liquid through the cheesecloth, and squeeze the berries well. Divide into clean bottles and seal well. Place in a dark, cool place.
