- 1 onion (diced)
- 2 cloves garlic cloves (diced)
- 1 chili pepper (finely chopped)
- 1 stick Celery (sliced)
- 2 Tbsps olive oil
- ⅔ cup Rioja wine
- 3 cups Meat stock
- 5 ½ cups waxy potatoes (peeled and diced)
- 4 sprigs thyme
- 3 Tomatoes (skinned and diced)
- 2 cups Chorizo (sliced)
- 1 Tbsp Caper
Preparation steps

Fry the onion, garlic, chilli and celery in hot oil for 1-2 minutes. Deglaze with the wine and the stock and add the potatoes and thyme. Simmer for around 20 minutes.

Add the tomatoes and chorizo to the soup and cook for 5-10 minutes. Season with salt and ground black pepper and serve.
