Rice pudding is a real white protein giant and makes you feel full. Thanks to gooseberries and kiwi, the sauce to go with it has a high vitamin C content - this strengthens the body's defences.
Advantage when preparing the rice in the microwave: The rice cooks faster and cannot burn. But you can also do without: rinse a pot with cold water, boil the rice in the milk once and then let it swell for 30 minutes at very low heat.

- 4 ozs Arborio rice
- 1 small Kiwi
- 4 ozs Gooseberry
- 1 Tbsp slivered almonds
- 1 Tbsp honey

Preparation steps
Mix milk and rice in a large microwave-safe bowl, stir, cover and cook at 600 watts in the microwave for 20 minutes.
Meanwhile, peel and roughly chop kiwi. Rinse gooseberries, cut off ends and cut in half. Put gooseberries and diced kiwi in a high vessel and coarsely puree with an immersion blender.
Toast almonds in a non-stick pan until golden brown and fragrant.
Stir honey into cooked rice. Serve rice pudding warm or cold sprinkled with sliced almonds and kiwi sauce.
