1 bunch scallions
6 Tbsps vegetable oil
2 Tbsps Pine nuts
2 Tbsps Curry
2 Tbsps raisins

Preparation steps

1.

Cook rice in salted boiling water, then transfer to a strainer and drain well.

2.

Peel and slice carrots. Rinse, trim and slice scallions crosswise.

3.

In a pan, toast pine nuts in oil. Remove from pan. Add carrots and sauté about 10 minutes. In the last few minutes, stir in scallions. Sprinkle with curry powder and sauté briefly.

4.

Mix in rice, raisins and pine nuts and heat briefly. Season with salt and pepper.
