Rice with Chicken

- 1 chicken (about 1200 grams)

- 120 grams onions
- 4 garlic cloves
- 1 red chili pepper
- 150 grams carrots
- 4 Tbsps Peanut oil
- 1 Tbsp sweet ground paprika
- 1 Cinnamon stick
- ½ tsp ground allspice
- 1 tsp ground Turmeric
- 250 grams Long grain rice
- 1 can Diced tomatoes
- 500 milliliters Chicken broth
- 150 grams ham
- 150 grams Frozen pea
- 1 Tbsp chopped parsley
Preparation steps
Rinse the chicken under cold running water, drain well, then divide into about 8-10 parts. Season the chicken with salt and pepper. Peel the onion and garlic, cut the onion into thin rings and the garlic into thin slices. Rinse the chile pepper, cut lengthwise, remove the seeds, remove the white membranes and finely chop.
Peel the carrot and cut into thin slices. Heat the peanut oil in a Dutch oven and saute the chicken pieces. Reduce the heat, add the onion, garlic, chile, spices and rice. Add the diced tomatoes with juice, a little chicken broth and carrots.
Bring to a boil, reduce heat and simmer, covered about 20 minutes. Stir often and pour in the remaining chicken broth as needed to taste. Cut the ham into 1 cm (approximately 1/2 inch) pieces, mix in with the peas and cook 5-8 more minutes. Season to taste and serve sprinkled with parsley.
