3 Tbsps Oil
4 Pork chop
4 slices Bacon (diced)

1 onion (chopped)
1 red pepper (seeds removed; diced)
0.333 cup Red wine vinegar
¾ cup Red wine
1 Tbsp freshly chopped thyme (plus extra to garnish)

Preparation steps

1.
Preheat the oven to 160°C (140° fan) 325°F gas 3.
2.
Heat 1 tablespoon of oil in a frying pan. Season the chops with salt and pepper and brown quickly on both sides. Put the chops in a baking dish.
3.
Add the bacon to the pan and fry quickly, stirring until browned, the put into the baking dish.
4.
Add the remaining oil to the pan and cook the onion and pepper for 5-10 minutes until softened. Put into the baking dish.

Add the vinegar to the pan and cook until reduced by half, scraping the bits off the base of the pan. Add the wine and thyme and cook for 5 minutes.
6.
Pour into the baking dish, cover and cook for 50-60 minutes, until the chops are tender.
7.
Place on serving plates, sprinkle with a little thyme and serve with mashed potatoes.
