1 ⅕ kilograms roasted pork roulade (with rind, from the leg)

2 Tbsps vegetable oil
3 shallots
500 grams cooked Chestnuts (vacuum-packed)
400 milliliters Beef broth

Preparation steps

Preheat oven to 180°C (approximately 350°F).

Rinse meat, pat dry and tie with kitchen string. Season with salt and pepper and sear on all sides in a roasting pan with hot oil. Remove and set aside. Peel shallots and cut into wedges. Saute with chestnuts in roasting pan in drippings. Deglaze with a little stock. Place meat on top and roast for 60-70 minutes. Pour in remaining stock.

3.

Season vegetables and sauce. Remove roast from kitchen string, slice and serve with vegetables and sauce.
