1 tsp peppercorns
1 Tbsp Sea salt
3 garlic cloves
2 Tbsps honey
2 Tbsps olive oil
800 grams skinless Roasted pork (shoulder)
1 tsp Ghee (Clarified butter; 5 g)
1 stalk Leeks
3 Tomatoes

Preparation steps

1.

For the marinade, crush the chile pepper with the peppercorns and salt in a mortar. Peel and chop the garlic and mix with the honey, oil and spices.

Rinse the roast pork rinse with cold water and pat dry.

Heat the ghee in a roasting pan. Sear the meat on all sides over high heat about 4 minutes .

Brush the meat with a little marinade and bake in an oven preheated to 200°C (approximately 400°F) (fan oven 180°C (approximately 350°F); gas mark 3) about 55 minutes, and brush again with marinade.

5.

Meanwhile, rinse the leeks, shake dry, trim and cut into 2 cm (approximately 3/4 inch) pieces. Rinse and quarter the tomatoes.

6.

Add the leeks and tomatoes to the pork and cook for 20 more minutes. Remove from the oven and serve.
