Preparation steps

1.
Preheat the oven to 200 ° C upper and lower heat.
2.

Rinse and dry tomatoes, arrange in an oiled baking pan. Peel garlic and squeeze through a garlic press, sprinkle over tomatoes. Rinse rosemary, pluck off leaves and sprinkle over tomatoes as well. Drizzle with 2 tablespoons of oil, season with salt and pepper. Add wine to the pan and roast in preheated oven at 200°C (approximately 400°F) for about 25 minutes.

3.

Peel onions and dice finely. Heat 1 tablespoon of butter in a pan and saute onions until translucent. Whisk egg yolk, breadcrumbs, mustard and remaining butter, season with salt and pepper.

4.

Rinse steaks and pat dry, season with salt and pepper. Heat remaining oil in a pan and sear steaks on both sides for about 2 minutes. Place on a baking sheet and spread with mustard mixture. Roast in preheated oven (with tomatoes) for about 4-5 minutes.

5.

Arrange roast steaks and tomatoes on plates and serve.
