The easiest way to tell if the salmon is cooked through is to cut it. Prick the middle of the fillet with a sharp knife. If it is still very glassy in the middle, it is not yet cooked. If it's only slightly translucent, it's perfect. When it's removed from the heat, it's still cooking.

4 Salmon cutlets (about 250 grams)
salt
freshly ground peppers
cayenne pepper
4 Tbsps lemon juice
2 Tbsps olive oil
1 bunch Sorrel

Preparation steps

Season salmon steaks with salt, pepper, cayenne pepper and half of the lemon juice. Drizzle with olive oil and let marinate about 20 minutes.

Rinse sorrel and shake dry.

Place salmon steaks on a hot grill or in an oiled grill pan. Grill 3-4 minutes per side. Season again with salt and pepper and serve with melted butter. Serve sorrel on the side, drizzled with remaining lemon juice.
